When we talk about gastronomy, it is highly common that all types of dishes utilize the French techniques and French classic cuts for their preparation. The references are connected to the high amount of classic French cookbooks, authors, famous restaurants and chefs.
In Brazil, whenever you visit a restaurant, the probability of seeing at least one dish or dessert based on French cuisine is high, even in restaurants not related at all to its culinary.
Worldwide kitchens still bow to France. In contrast, France food scene is extremely regional. French cooks respect their own regions, seasonal produce and ingredients. If you visit the country, starting by the north and then travel south, you will be able to see the difference between the dishes - and will hardly ever find dishes from other parts of the country on the menu.
